What exactly is a “bistro”?

Many businesses like to place bistro in their name without truly understanding it’s origins. For this reason, many are confused, and properly so, as to what a bistro really is!
A bistro, sometimes spelled bistrot, is, in its original 1920’s Parisian incarnation, a small restaurant serving moderately priced simple meals in a modest setting. Bistros are defined mostly by the foods they serve. Slow-cooked foods like braised meats are typical.
